Mahshi, or stuffed vegetables, is one of the most loved dishes on the Egyptian table, especially at family gatherings. Vine leaves, zucchini, peppers, eggplant and cabbage leaves are filled with a seasoned rice mixture and cooked slowly until tender.

The filling: rice is mixed with fresh herbs such as parsley, dill and coriander, together with tomato, onion and spices. Some homes add minced meat; others keep it entirely vegetable-based, so the description of each dish matters if you are choosing a meat-free option.

The cooking: the vegetables are packed snugly into a pot, covered with broth or tomato sauce and simmered gently. Slow cooking lets the rice absorb the juices and keeps the vegetables soft without falling apart.
